If you find yourself (or the kids!) running out the door every morning with a rumbling belly, whip up a batch of these Healthy Breakfast Cookies for an easy and healthy grab-and-go breakfast.

From the creative kitchen of Arman Liew (better known as The Big Man’s World) comes these utterly delectable breakfast treats that are super easy to make, and adapt into 10 different flavours!

Ingredients (makes 12 Cookies )

  • 2 cups rolled oats
  • 1/4 cup protein powder (optional)
  • 1 and 1/4 cup mashed banana
  • 1/2 cup peanut butter
  • 2 tablespoons maple syrup

Method

  1. Preheat the oven to 180C. Line a large baking sheet with baking paper.
  2. Add oats, protein powder, banana, peanut butter, and maple syrup into a bowl and mix until a thick dough remains. Fold through your favourite mix-ins (see notes below).
  3. Scoop out portions of the dough and place them on the lined sheet. Use a knife to shape the dough into large, cookie shapes.
  4. Bake for 10-12 minutes, or until the edges are golden brown.
  5. Remove the cookies from the oven and let them cool completely.

Want to mix it up? Here are the different variations to up your breakfast cookie game:

  1. Cinnamon roll: Add 1/2 teaspoon cinnamon and 1 tablespoon of brown sugar. Drizzle the baked cookies with a simple glaze made of cream cheese, milk, powdered sugar and vanilla extract.
  2. Oatmeal raisin: Fold through 1/2 cup of raisins.
  3. Biscoff: Swap out half the peanut butter (or nut/seed butter of choice) with smooth Biscoff or cookie butter spread.
  4. Caramilk: Drizzle the cookies with melted Caramilk chocolate and/or Caramilk baking chips.
  5. White chocolate and raspberry: Add 1/2 cup of fresh or frozen raspberries and 1/4 cup of white chocolate chips.
  6. Strawberry: Fold through 1/2 cup of strawberries.
  7. Double chocolate:  Add 1/2 cup of cocoa powder and fold through 1/4 cup of chocolate chips.
  8. Chocolate peanut butter: Add 1/2 cup of cocoa powder and drizzle melted peanut butter over the freshly baked cookies.
  9. Nutella: Replace the nut/seed butter with homemade Nutella.
  10. Monster: Fold through 1/2 cup of M&M’s or candy buttons.

  • This is the best recipe ever! I live that it is generally healthy and has endless customisation options. I would probably skip the protein powder but I may throw an egg in and see how it comes out for texture. Peanut butter is a favourite in our household so I imagine these biscuits will not last long!


  • These sound and look delicious and easy to make. Home made biscuits are so much healthier than store bought ones and these ingredients can be found in most pantries. My only problem would be portion control. Unfortunately, I can’t stop at one so when I bake biscuits I freeze them as soon as possible.


  • I have made these several times and they are always a hit in the house! When my toddler was starting his food discovery I would make them without the protein powder and mill the oats up a bit. The maple syrup sweetener made it a good option for him (small servings, of course). I now make them with whatever mix ins I have handy. A favourite for me has been preserved lemon peel and white chocolate.


  • I have all the ingredients for these except for the bananas which are my least favorite fruit so I never buy them. I only have them on hand when one of my work mates gifts me some from their garden. Next time I will use them up by making these


  • I am wondering if I can swap the maple syrup for honey? I will give them a try and see.


  • These sound so delicious and i love that you don’t need alot of ingredients or time to whip.these ones up. Im always looking for something for my teenager to eat in the morning that is quick, healthy and will keep them feeling full. I will have to make these ones soon
